In milk there are three proteins. They are casein, albumin and globulin. Casein is there in milk as a suspension while albumin and globulin are in true solution. As they are in true solution, they are called whey proteins because the water portion of milk is called whey. American whey protein is made from this whey.
During cheese production, milk is coagulated by adding the enzyme rennin into milk in a cheese vat. After 30 to 45 minutes, the milk will coagulate. On coagulation, the water soluble proteins go into the whey while the casein which doesn't dissolve in water becomes a coagulum. This coagulum is processed into cheese. The whey is drained out from the vat and used in the manufacture of various food products such as Whey powder, lactose and these proteins.

Whey has all the water soluble matter in the milk. It has two of the proteins and all the water soluble vitamins and minerals.
